BBQ CARAMELIZED SQUASH OVER YOGURT

INGREDIENTS (Squash):

  • 3C butternut squash, cubed

  • 1C Greek yogurt

  • 3oz arugula 

  • ¼ fennel bulb, sliced

  • ¼ radicchio head, sliced

  • ¼ C parsley, chopped

  • ¼ C scallions, chopped

  • Olive oil 

  • Salt

  • Black Pepper 

  • Triple Crown Classic BBQ Sauce 

INSTRUCTIONS (Squash):

  1. Preheat oven to 400 degrees Fahrenheit 

  2. Toss butternut squash in olive oil and season with salt and pepper 

  3. Put butternut squash on a lined baking sheet and bake for 20 minutes 

  4. Assemble arugula, fennel, radicchio, parsley, and scallions in a bowl and set aside

  5. Take butternut squash out after 20 minutes and toss in Triple Crown Classic BBQ sauce, put it back in the oven for another 15-20 minutes until it is cooked through and caramelized. 

  6. Toss your salad with your vinaigrette 

  7. Put yogurt on a plate, caramelized squash down, top with salad and enjoy! 

INSTRUCTIONS (Vinaigrette):

  • 2Tbsp olive oil 

  • 1Tsp honey 

  • 1Tbsp apple cider vinegar 

  • 1Tbsp Triple Crown Classic BBQ Sauce 

  • ¼ Tsp salt

  • ¼ Tsp black pepper 

INSTRUCTION (Vinaigrette):

  1. COMBINE ALL INGREDIENTS IN A JAR AND SHAKE TO EMULSIFY
