Triple Crown Hickory Bourbon BBQ Pot Roast

Prep Time: 20 minutes

Cook Time: 4 hours

Servings: 12

Ingredients:

4 pound chuck roast

3 teaspoons sea salt

3 teaspoons ground black pepper

2 tablespoons vegetable oil

2 medium yellow or sweet onion, chopped

4 garlic cloves, minced

2 (14oz.) bottle of Triple Crown Hickory Bourbon BBQ sauce

Instructions:

Preheat the oven to 325°F.

Sprinkle salt and pepper all over chuck roast.

Heat oil in a heavy bottomed Dutch Oven.

Add chuck roast and sear about 2 minutes on each side.

Add onion and garlic and saute for about one minute.

Pour BBQ sauce on top of chuck roast, lifting it to let some go underneath.

Cover and place in oven and cook for 2 hours. Remove from oven, turn roast over and return to oven for 2 more hours (option to cook uncovered for the last 30 minutes to thicken the sauce).

Add to a bun along with some slaw and you have some magic happening. Sides of mashed potatoes and brussels sprouts will make this a big deal meal!
