BBQ Chicken over Rice


  • 2 tablespoons apple cider vinegar

  • Your favorite rice seasoning or try this

  • Sea salt + ground pepper to taste

  • 2-3 medium chicken breasts

  • 3 Cups of cooked rice <- Great resource to measure cooked rice

  • 2 tablespoons pure maple syrup

  • 1/8 cup olive oil

  • 1 tablespoon lemon juice

  • 2 cored honey crisp apple (Shout out to UMN!)


  1. Prepare stove and begin cooking rice

  2. Add medium pan to the stove to prep for chicken

  3. In a small bowl, whisk together vinegar, maple syrup and a pinch each of salt and pepper. While whisking, drizzle in oil until all oil is fully mixed in

  4. In medium bowl, toss lemon juice and herbs until well combined.

  5. Season chicken with salt and pepper. After hot, add chicken to stove to fully cook.

  6. While cooking, core apples and slice into circular pieces. Something like this

  7. Toss rice with herb mixture to fully cover the rice

  8. Spread rice on large platter; arrange chicken and apples over the rice. Drizzle chicken and apples with maple syrup mixture

    Note** We don’t cook apples but they can be cooked as well
